Characteristics
Cappelli durum wheat is a variety of durum wheat created by the geneticist Nazzareno Strampelli, in the Le Marche Region of Italy, at the beginning of the 20th century. It is cultivated mainly in Southern Italy and has excellent nutritional properties. The pasta obtained with its semolina uses special pasta making techniques, such as bronze drawing and drying at low temperatures, which guarantee the integrity of the main taste and aroma qualities.
